The custom of the dessert fruit pyramid originated in Europe, where it was standard banquet fare, gracing tables in castles and palaces from the German states to the French court at Versailles. The pyramidal hotsell form of the fruit dessert favored in the colonial period boasted fresh or preserved small symmetrical fruits such as lemons, limes, apples, pears, cherries, and grapes, carefully stacked between layers of moss. The stacked fruits were fashioned into the shape of a cone or pyramid, and were often embellished with vines, leaves and flowers. Sometimes larger fruits like apples, oranges or pears were balanced on top of one another with a little sugar icing for stabilization. This is my interpretation of an pear pyramid.
